Job Description

We are seeking a highly creative and skilled Pastry Chef / Chocolatier to elevate our dessert and chocolate offerings. This pivotal role requires an individual with a passion for pastry arts, an expert hand in chocolate work, and a commitment to producing visually stunning and delicious confections. You will be responsible for the daily production of a wide range of pastries, desserts, and handcrafted chocolates for our various dining outlets, banquets, and special events. This position offers visa sponsorship for the right candidate eager to bring their international expertise to our team in Llanelli, Wales.

Key Responsibilities

  • Design, prepare, and present an array of high-quality pastries, cakes, tarts, and other dessert items.
  • Create bespoke chocolate confections, including bonbons, truffles, and sculptures, demonstrating exceptional artistry and precision.
  • Develop new and innovative dessert and chocolate recipes that align with current culinary trends and guest preferences.
  • Manage inventory of pastry and chocolate ingredients, ensuring proper stock rotation and minimizing waste.
  • Maintain a clean, organized, and hygienic workstation in accordance with health and safety regulations.
  • Train and mentor junior pastry staff, fostering a collaborative and educational kitchen environment.
  • Collaborate with the Executive Chef and other culinary team members to coordinate production and menu planning.
  • Ensure consistency in taste, quality, and presentation of all pastry and chocolate items.
  • Adhere to food cost controls and contribute to profitability through efficient production practices.

Required Skills

  • Proven experience as a Pastry Chef or Chocolatier in a high-volume, quality establishment.
  • Exceptional artistic flair and precision in pastry decoration and chocolate tempering/moulding.
  • Strong understanding of classical and modern pastry techniques.
  • Proficiency in various chocolate making methods, including tempering, moulding, and ganache creation.
  • Ability to work independently and as part of a team in a fast-paced environment.
  • Excellent organizational and time management skills.
  • Knowledge of food safety and hygiene standards (HACCP).
  • Creativity and passion for culinary innovation.

Preferred Qualifications

  • Culinary degree or professional certification in Pastry Arts or Chocolatiering.
  • Experience in a luxury hotel or Michelin-starred restaurant environment.
  • Fluency in English (written and spoken).
  • Portfolio of previous pastry and chocolate work.
