Job Description

We are seeking a highly creative and skilled Pastry Chef / Chocolatier to join our esteemed culinary team in Vaudreuil-Dorion, Quebec. This role is ideal for an ambitious individual with a deep passion for fine pastry and artisanal chocolate, eager to contribute to a world-class dining experience. The successful candidate will be responsible for designing, preparing, and presenting a wide array of exquisite desserts, pastries, and chocolates, ensuring the highest standards of quality and creativity. Key Responsibilities

  • Develop and execute innovative and visually stunning pastry and chocolate creations for various outlets, including restaurants, banquets, and special events.
  • Oversee the daily production of all pastry and chocolate items, ensuring consistency, quality, and adherence to recipes and standards.
  • Manage inventory, control costs, and minimize waste while maintaining high product standards.
  • Train, mentor, and supervise junior pastry team members, fostering a collaborative and high-performance environment.
  • Ensure compliance with all health, safety, and sanitation regulations in the pastry kitchen.
  • Collaborate with the Executive Chef and other culinary leaders to plan seasonal menus and special promotions.
  • Stay abreast of industry trends and techniques in pastry and chocolate arts to continuously innovate and elevate offerings.

Required Skills

  • Proven experience as a Pastry Chef or Chocolatier in a high-volume, luxury hotel or fine dining establishment.
  • Exceptional creativity and artistic flair in pastry and chocolate decoration.
  • Extensive knowledge of various pastry techniques, including baking, confectionery, and sugar work.
  • Proficiency in working with high-quality chocolate and creating a diverse range of chocolate products.
  • Strong understanding of food safety and sanitation regulations (HACCP certification preferred).
  • Ability to work efficiently under pressure and manage multiple tasks simultaneously.
  • Excellent leadership, communication, and interpersonal skills.
  • Fluency in English; knowledge of French is an asset.

Preferred Qualifications

  • Culinary degree or equivalent professional certification in pastry arts.
  • Experience with international pastry styles and flavors.
  • Prior experience in a luxury hotel brand.
  • Certification in advanced chocolate artistry.
  • Demonstrated portfolio of pastry and chocolate creations.
